Well this is a guide to making a giant cupcake using our new giant cupcake mould. Included is a giant cupcake recipe, the baking method as well as an idea on how to decorate a it. Cupcakes!! They used to be called Fairy Cakes when I was a kid, made with the bog standard Victoria Sponge recipe and decorated with a dollop of glace icing and a splatter of hundreds and thousands. They were the staple of birthday parties, school fetes and coffee mornings across the land and if you were lucky you might get the chocolate variation. How exciting!! Don`t get me wrong, I`m not knocking the fairy cake, in fact these were the first cakes I ever made, which sparked off the baking bug in me and an obsession with bakeware. How the humble fairy cake has transformed since the 1980`s into what can now only be referred to as a Cupcake Revolution. Yes it has taken on the name of our American friends and become the "Cupcake", a baking phenomenon which has swept the nation. Any excuse to bake a cupcake and we are there, and that includes me, which is why my friends and family are always trying to find new baking gift ideas for me. One of the most fun baking gifts I have received has got to be the Giant Cupcake Mould, which is a silicone bakeware mould which makes a giant cupcake 25 times bigger than your standard size cupcake. It has proved to be a great piece of bakeware and I use it regularly for family birthday cakes and other special occasions. So here is how to make a giant cupcake. They`re easy to make and there are quite a few different tins and moulds available on the market now, which you can find in online kitchen shops such as The Kitchen Gift Co who sell a range of baking gifts, bakeware and silicone bakeware. I prefer the silicone bakeware version as it is non-stick and flexible which definitely helps when turning out your cake, as does a touch of cooking spray. The mould I use comes in 3 parts, the bottom mould, the top mould (which is the bit that gets decorated) and an extra mould which can be used to create an indentation or hollow in the main cake to add a filling.
Once you`ve chosen your tin or mould then you need a good giant cupcake recipe. To be honest, a good Victoria Sponge recipe works wonders although you do have to double the recipe to get the correct quantity to fill the moulds.
Giant Cupcake Recipe
I use 450g equal quantities of butter, sugar and self-raising flour, 8 eggs, 4 level tsp baking powder, 2 tsp vanilla extract, and 3 tbsp milk and make up your cake batter as you would normally. Make sure your oven is heated to 180c, then lightly spritz your mould with cooking spray, fill with the cake mixture up to 3/4 full, place the moulds on a baking tray and bake in the centre of your oven for 40-50 minutes. Remember if you want to create a "filling" cavity then place the extra mould on top of the bottom mould (like a lid). Once baked, take out of the oven and leave to cool for about 20 minutes. It will now be ready to turn out, assemble and decorate. If you used the extra mould there will be an indentation in the bottom cake which you can fill with buttercream frosting. A basic buttercream frosting recipe uses 1 part butter to 2 parts icing sugar, so you just increase the quantity depending how much frosting you need for your decoration. You can add different food colourings to change the colour of your frosting, as well as top with sugarcraft decorations for a mighty impressive looking Giant Cupcake. As baking gifts go the giant cupcake mould is one of the greatest baking gift ideas ever.
